Rosy Tomorrows Heritage Farm to feature Chef Taylor at Market Day
Chef James Taylor will be in the kitchen during this week’s Rosy Tomorrows Heritage Farm Market Day today, April 23, from 10 a.m. to 3 p.m.
Taylor, a certified chef with the American Culinary Federation, will be serving a savory individual galette (pastry) with Rosy Tomorrows’ pork, heirloom tomato, caramelized onion and fennel topped with a juniper braised pork shoulder and a pastured-raised egg, then finished with organic arugula and Chevre for $6.
To accompany the featured lunch item is homemade basil lemonade for $1.
Other items featured at this week’s Market Day are 100 percent grass-fed beef, wild boar, imported and domestic cheeses, salad greens, freshly baked breads including baguettes, loaves and boules, pork and beef savory hand pies, strawberry sweet hand pies, Rosy’s own meat rub and Paleo salt, and more.
“Wild boars feed on a variety of acorns, berries, mushrooms, roots, grasses and fruit,” said Rose O’Dell King, owner of Rosy Tomorrows Heritage Farm, in a prepared statement. “Their meat is very healthy and has a delicious nutty and sweet taste.”
The health benefits of 100 percent grass-fed beef are numerous, farm officials state. Cows raised entirely on grass have about twice the levels of conjugated linoleic acid isomers, which may have cancer fighting properties and lower the risk of diabetes and other health problems. As noted in The New York Times, 100 percent grass-fed beef also has higher levels of omega-3 fatty acids, which are better for cardiovascular health and offers more vitamins A and E as well as antioxidants.
Raising 100 percent grass-fed beef and pastured red wattle hogs and heritage poultry, Rosy Tomorrows Heritage Farm, is a sustainable farm. No grain, hormones or antibiotics are given to the animals and the grass is not treated with chemical fertilizers, herbicides or pesticides.
